CHOTO CHOTPHATA

Choto, means small and chatphata refers to a dish that has a combination of sour, spicy and sweetness.
This dish is made using small cubes of potatoes which are boiled and pan fried until crispy, and mixed with handful of chickpeas and tossed together in a dry roasted spices and topped with homemade coriander, tamarind sauce and vegan yogurt.

MUSHROOM BHAJA

Mushrooms are grown all over the country specially during the monsoon season. However, one must be very careful to harvest only the edible ones. Due to this fear, most mushrooms are gone untouched. The ones that makes to the local restaurants, are considered to be a delicacy.
In this dish, I will be using small button mushrooms which will be filled with spicy mashed potatoes, dipped in garam flour and deep fried. Served on a bed of homemade tamarind mango chilli sauce.

 KATHAL BIRYANI

Growing up in Bangladesh, I have fond memories of all the jackfruit trees around the house and the amount of fruits they produced. Mum often came up with different ways to use all the fruits, and one of my favourite was the biriyani.
Biriyani is a food of festivals and celebrations all over the Indian Subcontinent. It is cooked by layers marinated meat with rice and cooked together.
Here, I will be using young Jackfruit just like mum use to to replace the meat.
The jackfruit junks are marinated with roasted spices and plant based yogurt, then layered with fragrant basmati rice, fried onions and fresh herbs.
Served with pineapple skewers.
Allergens: Nuts

BHAPA PITTA

Bhapa means steam, and this is a most sought after traditional dish of Chittagong. My grandmother usually use to make this at the start of the winter season. Dough is made using rice flour and is stuffed with caramelised desiccated coconut, and served with date molasses.

AMER LASSI MALAI

One of the most memorable moments from my childhood, was walking on the beach watching the sunset, holding dad’s hand and eating a mango flavoured kulfi.
The bay of Bengal, famously knows as the “cox’s bazar sea beach, is the longest natural unbroken beach in the world. In the evening, the beach is filled with food vendors selling all sorts of street food, some spicy, some sour, some sweets.

This dessert is one such example of vanilla ice cream topped with mango lassi and chopped nuts.
Allergens: nuts
