Manchurian Soya Chili Chunks

When you don't know what to have for dinner... you make a stir fry. Serve it with rice or noddles, some kimchi, or fresh cucumber salad. This recipe serves 4, along with the other sides you choose.
INGREDIENTS
2 cups Soya Chunks
4 tablespoons oil, divided
1 teaspoon minced Garlic
1 teaspoon minced Ginger
1 tsp chili flakes
1 Bell Pepper, diced
2 medium courgettes, diced
2 small carrots, diced
1 handful of frozen green beans
1/2 teaspoon salt
For the sauce:
1 tablespoon starch
1/2 teaspoon of cracked black pepper
1 inch of a fresh ginger piece or 1 Tbsp of ginger paste
1 heaped tablespoon of miso paste
3 tablespoons Light Soy Sauce
1 tablespoon Chilli Sauce or hot sauce, or more... 🙂
2 tablespoons Tomato Ketchup
1 cup of water
Toppings:
Chopped green onions, fresh coriander, and sesame seeds

Soya Chunks:
Boil soya chunks with plenty of water and salt for about 7min. Strain them well after.
Sauce:
Blend all ingredients for the sauce in a blender until smooth.
Add half of the sauce to the strained soya chunks and toss them with it. Set aside for 10 min while chopping the veggies. They will absorb the sauce.

Stir Fry: * Tip! Turn on your fan and open de window before you start. *
Heat half of the oil in a large pan at the highest speed and add the soya chunks. Fry them on all sides, for about 5-7min, avoid stirring constantly, just stir a couple of times so they can char a bit. Remove from the pan and set aside.

In the same pan, add remaining oil and fry chili flakes, garlic, ginger, red pepper on high heat for 2-3 minutes, stir only two times. Add courgettes and carrots, 4 min, stir only 2-3 times, add salt at this stage. Pour in the rest of the sauce, don't stir!. Cook 1 min, stir, cook another min, add green beans and soya chunks, stir. Cook 1 min, stir again, adjust liquid consistency as desired by adding more water if you want a saucy stir fry or cooking a bit longer to allow water to evaporate, 2 min max. Turn off the stove. Add fresh green onions.

Serving:
We serve it with plain jasmine rice, some lettuce leaves, cucumber salad with lime juice, sesame seed, fresh coriander, and our Miranda's Kimchi.
