Brown rice, chickpeas, broccoli and roasted almonds bowl

BROWN RICE 🍚 WITH CHICKPEAS, BROCCOLI 🥦 AND TOASTED ALMONDS WITH A DRESSING OF LEMON 🍋 AND DIJON MUSTARD

A quick and simple by eye recipe guide for a nice meal ;-). The quantities will depend on your diners.

Ingredients:
Brown Rice, tin chickpeas, fresh broccoli, fresh garlic, and salt.

Toppings: almonds, spring onions, fresh coriander

For the dressing: lime or lemon juice, jam, mustard, salt, black pepper, and olive oil.

Cooking:
Start by cooking the brown rice, according to packaging instructions, and with salt. 

Tin chickpeas, drain the liquid and wash the chickpeas with water. Drain afterward. 

On the other hand toast in a frying pan or the oven some ​​almonds. At the same time chop the broccoli flowers not too big, and its stem into smaller pieces. Boil the broccoli for only 3-4 min, until tender.

Sauté with oil 1 small minced garlic until golden, add the rice and the chickpeas. Sauté for just a few minutes and mix well. Remove from the heat.

Dressing:
Fresh lemon juice, a bit of some light-colored jam that you have in the fridge, like peach, orange, or any sweetener you like. Dijon mustard, olive oil, salt, and pepper to taste.

Fresh toppings:
Finely chop some spring green onions and plenty of fresh coriander.

Serve:
In a large bowl mix all the ingredients, add the dressing, and mix one more time!. A touch of chili flakes or smoked paprika goes really well.

Tip:
If you boil the broccoli with a little bit of baking soda and without the lid, this helps to intensify its green color.
