Ingredients:
1 courgette, spiralized or strips
1 cucumber, spiralized/strips
Note: if you don´t have a spiralizer, you can use a peeler and make strips
1-inch fresh ginger, peeled and finely grated
A handful of hazelnut, toasted/roasted and slightly crushed (set aside)
Dressing:
1/2 to 1 avocado, smashed
Juice of one lemon, safe some zest before squeezing 😉
1-2 Tbsp of yogurt of choice, we like to use soy
2 Tbsp of olive oil
Salt and pepper to taste
Mix all together, topped with toasted hazelnut and lemon zest. This pairs well with our Cassava Bread. Yum!
